Supervise and coordinate the activities of the chef and staff. Determine how dishes should be presented and make decorative gourmet displays. Ensures proper portioning, arrangement and food garnishes are presented. Monitor the amount of food being prepared. Inform food service personnel of items that have been eliminated and the number of existing menu specials. Prepare special recipes or substitute foods. Assist chefs and kitchen staff with various tasks. Provide the chef with the items he needs. Monitor the inventory of kitchen supplies and food. Maintain a kitchen log for food safety programs and food. Ensures the quality of food and notifies the manager if product does not meet specifications. Assists management in recruiting, training, scheduling, evaluating, grooming, disciplining, motivating and mentoring employees.
